As a certified chef and restaurant expert in Germany I was trained in cooking, nutrition, and food-related business for 5 years. Eventually I discovered my own path for healthy eating and living - but it took me a few years and lots of research to get there. It was also a drastic correction from what I had originally learned. Chefs and restaurant operators are more concerned with food flavor than the health impact of their foods.
Like many others, I bought into the message that "eating everything in moderation is the way to stay healthy". For a few of us these healthy diet tips may work just fine, but for many others it is not delivering on the promise to prevent or reverse diseases. My mum died of breast cancer and my dad battled colon cancer twice. Other family members were struck with heart disease and more cancers. They lived a relatively healthy lifestyle based on "moderate eating" - but that was simply not good enough.
Our society is used to popping pills or having invasive surgeries once our bad eating habits catch up with us the wrong way. Many of us may not be aware that we are what we eat, which precisely means this: Rubbish In – Rubbish Out.

Consuming foods high in sodium and sugar, or cholesterol-ladden meat, cheese, and eggs in moderation will only go so far to preserve your good health - but it will likely not allow you to entirely prevent or reverse diet-inflicted illnesses like heart disease, diabetes, cancer, or obesity.
This is where you need some new healthy eating guidelines that tell it like it really is. They address the root causes of diseases and focus on prevention.
