Red Cabbage Sweet and Sour from Germany

This cabbage dish is a main staple in Germany and it can be eaten with mashed or cooked potatoes.
It also goes very well with a hearty vegetarian meatloaf!
Red cabbage is a low calorie nutrition powerhouse with many antioxidants that detoxify the body, reduce the cancer risk, and protect a healthy bone structure.
Great for: low calorie, vegetarian (vegan)
Nutrients: protein, potassium, calcium, iron, magnesium, fiber, vitamins A, B6, C, and K, manganese
Ingredients:
- 1/4 cup butter (Earth Balance or soy margarine for vegan version)
- 1 2-pound organic red cabbage, thinly sliced
- 6 tablespoons organic raw sugar
- 2/3 cup balsamic vinegar
Directions:
Melt the butter in a large pot over medium heat. Add the cabbage and saute until slightly wilted, about 5 minutes. Add the sugar and toss to coat evenly. Add vinegar and reduce the heat to medium-low. Cover and simmer until the cabbage is tender while stirring often, about 30 minutes. Season to taste with salt and pepper.
