Tahini Dip With Ground Sesame Seeds

This tahini dip is easy to make and highly nutritious. It uses ground sesame seeds and can be eaten with raw vegetable sticks,
pita bread, whole wheat crackers, rice cakes, etc.
Great for: raw, heart healthy, low cholesterol, healthy snack, low calorie, vegan
Nutrients: fat, fiber
Ingredients for dip:
- 2-3 cloves garlic, peeled and crushed
- 4 tablespoons lemon juice
- 3 tablespoons cold water
- Unprocessed sea salt to taste
- 1/4 cup tahini (see below)
Ingredients for tahini:
- 2 Tablespoons sesame seeds
- 1/2 teaspoon sesame oil
- 1/4 teaspoon unprocessed sea salt
- 1/4 cup luke-warm water
Directions for tahini:
Place the sesame seeds in a blender or food processor and grind until smooth. Add sesame oil and salt, process until all is combined. With the motor running, add the water in a very slow, steady stream and blend until smooth.
Directions for dip:
Put the crushed garlic in a non-metallic bowl and add the tahini. Beat with a fork, then add the lemon juice and beat it again. Mix in the salt and add the cold water a little bit at a time, while continuing to beat. Adjust the spice level per taste. An alternative is to throw everything together into a blender.
